Tuesday Treats: Summer Pineapple Pie

Hello Friends!  Summer is flying by and I haven’t posted in a while.  I wanted to share a super easy, yet fabulous summer dessert.  This light and refreshing pineapple pie is the perfect ending to any summer barbecue.  When I say it’s easy, I mean five ingredients easy.  I got this recipe years ago from a fellow teacher and teachers always seem to have the best recipes to share, especially easy recipes because we’re always on the go!  I hope that you enjoy this wonderful dessert and as always, shoot me any questions that you might have.  That’s today’s dish!

Deb’s Summer Pineapple Pie:

  • 1 Large box of vanilla instant pudding mix
  • 16 Ounces of sour cream
  • 20 Ounces of crushed pineapple with the juice (Do Not used crushed pineapple in syrup)
  • 1 Prepared Graham cracker crust (I use the the 9oz crust, but either will do)
  • 1 Container of cool whip or  2 cups lightly sweetened real whipped cream

Mix the powdered pudding mix,  sour cream, and the crushed pineapple with the juice until well combined.  Spread it evenly into the prepared graham cracker crust.  Top with the cool whip or whipped cream and chill for several hours or overnight.  Enjoy!
